To experience the namesake in action, check out the Pink Tacos: Corn tortillas topped with pinto beans, arbor salsa, grilled chicken, pickled pink onions, and avocado ($12.95), or live it up with the Sabana de Pollo, a platter of thinly cut chicken breast topped with pinto beans, melted cheese, chimichurri sauce, grilled onions, pico de gall, and roasted serrano peppers ($15.95).

Want something lighter? Try the Simply Grilled Market Fish (market price; ask for the day's selections), or the Ensalada de Camerones, which pairs pan seared achiote-marinated shrimp with mixed greens, shaved red onions, sliced pears, roasted cherry tomatoes, avocado, bleu cheese, hazelnuts, and champagne vinaigrette ($13.95). Add on a Raspberry Mojito for good measure ($9), and the fiesta is complete.
